What you need:
1 Can Low-Fat Refried Pinto Beans (make sure there's no lard/animal product)
~5 oz hot salsa
2 slices of soy American Cheese
~3 oz Boca meatless ground crumbles
1 tbsp olive oil
1 tsp dried chili pepper
What you do:
1) Heat medium sized pot to medium.
2) Pour oil into pot
3) Put chili pepper in oil, let heat
4) Add Boca meat
5) Let heat for 2 minutes, stir occasionally
6) Stir in salsa
7) Let simmer on low-ish heat for 1 minute
8) Stir in beans
9) Break apart cheese slices and mix into beans
10) Heat until cheese has melted and fully mixed in
Done!
** You can add more salsa/pepper to your liking. For more texture add more salsa, for more heat add more pepper
** You do not need to use cheese. Alternatively you could use more cheese! Whatever you like.
** For a more protein-y experience, up the amount of Boca to ~5 oz or whatever looks good to you. Increase step #5 time if you add more though.
